Keep your healthy eating plan afloat with mini pepper boats! These little guys are cute, colorful and waistline-friendly. Here’s what you need to make them:

What You Need

  1. 3 baby bell peppers, sliced in half lengthwise
  2. 2 T. guacamole (mashed avocado with a little onion and tomato)
  3. ¼ c. salsa
  4. 6 small slices of jalapeno
  5. cilantro, chopped
