Ingredients

  • ½ c. gluten-free rolled oats
  • ½ c. skim milk or dairy-free milk
  • ¼ c. low or no fat plain yogurt (or an additional ¼ cup of milk)
  • 1 t. maple syrup or honey, optional
  • 1 T. chocolate chips (sugar free or no sugar added)
  • 1-2 T. optional toppings (such as granola or nuts) (not used in analysis)

Directions

  1. Add oats, milk, yogurt and maple syrup (if using) into a jar that has a lid. Stir ingredients together.
  2. Mix in the chocolate chips (and nut butter if using) into the overnight oat mixture when prepping. Keep in the fridge until you are ready to pack the food cooler for your journey.
  3. The next morning (or when ready to eat), remove lid and stir to combine. (You can also simply shake the jar.). If oatmeal is too thick, more milk can be added to make it less dense.
  4. Add a few chocolate chips (with the chocolate granola and/or chopped nuts if using) to the top before eating. Enjoy the oats straight from the jar or pour into a bowl if preferred.

Pro Tip: This recipe can also be prepped and chilled for as little to 2-4 hours prior to consumption.
