Chocolate Chip & Oatmeal Walnut Cookies

Ingredients

  • ⅔ c. sugar
  • ⅓ c. soy milk
  • 2 T. canola oil
  • 1 t. pure vanilla extract
  • 1 medium egg
  • 1 c. whole-wheat flour
  • 1 c. rolled oats
  • ½ t. baking soda
  • ½ t. salt 
  • ½ c. semisweet chocolate chips (reserve 2 T. for melting)
  • ½ c. walnut pieces

Directions

  1. Preheat the oven to 425°F.
  2. In a bowl, combine the sugar, milk, oil, vanilla and egg.
  3. In a separate bowl, mix flour, oats, baking soda and salt. Add to the sugar mixture and combine well. Add the chocolate chips and walnuts.
  4. Drop batter by medium spoonfuls on a greased baking sheet. Bake for 10-12 minutes and cool.
  5. Melt the reserved 2 tablespoons of chocolate chips and drizzle on the cookies.
