Chocolate Chip & Oatmeal Walnut Cookies

Ingredients
- ⅔ c. sugar
- ⅓ c. soy milk
- 2 T. canola oil
- 1 t. pure vanilla extract
- 1 medium egg
- 1 c. whole-wheat flour
- 1 c. rolled oats
- ½ t. baking soda
- ½ t. salt
- ½ c. semisweet chocolate chips (reserve 2 T. for melting)
- ½ c. walnut pieces
Directions
- Preheat the oven to 425°F.
- In a bowl, combine the sugar, milk, oil, vanilla and egg.
- In a separate bowl, mix flour, oats, baking soda and salt. Add to the sugar mixture and combine well. Add the chocolate chips and walnuts.
- Drop batter by medium spoonfuls on a greased baking sheet. Bake for 10-12 minutes and cool.
- Melt the reserved 2 tablespoons of chocolate chips and drizzle on the cookies.
