Huevos Rancheros

Huevos rancheros gets its name from its beginning as a basic breakfast for people who worked long hours on farms or ranches in rural Mexico. It’s now a fave at Mexican restaurants worldwide.

Ingredients

  • 4 corn or flour tortillas
  • ½ c. chipotle sauce
  • ½ c. tomato sauce (low or no sodium)
  • 2 t. canola oil
  • 1 c. refried beans
  • 4 small eggs
  • 1 t. black pepper
  • 2 T. shredded cheese, optional
  • ½ c. fresh cilantro leaves, optional

Directions

  1. Preheat oven to 375°F. Place tortillas side-by-side in a casserole dish or on a baking sheet.
  2. Warm in the oven for 5 minutes.
  3. Meanwhile, mix the chipotle and tomato sauce together in a small bowl. Set it (and the tortillas once out of the oven) aside.
  4. Next, heat one teaspoon of oil slightly before adding the refried beans and the pepper. Cook until the beans are completely heated.
  5. Coat a small skillet with the remaining oil (or spritz with a nonstick cooking spray).
  6. One at a time, crack each egg over the skillet then fry to gently set. This usually takes no more than one minute.
  7. Smear the red sauce onto the bottom of each tortilla before layering on the beans and an egg, plus the cheese and cilantro if using. Savor immediately!
