Ranch Chicken Salad

This is a delicious and healthy twist on traditional chicken salad. Serve on Boston lettuce leaves or mixed greens.

Ingredients
- 8 oz. chicken breast, cooked
- 1 c. diced tangy apple (about 1 medium apple, try Cosmic, Honey Crisp or Granny Smith)
- 2 T. fresh lemon juice
- ½ c. diced red onion
- ½ c. diced celery
- ½ c. diced red bell pepper
- ½ c. nonfat Greek yogurt
- 2 T. fresh lemon juice
- 2 t. honey
- 1 t. garlic powder
- 1 t. onion powder
- 1 t. dried dill
- 1 t. Dijon mustard
- ½ t. black pepper
- ½ t. sea salt

Directions
- Dice chicken breast into bite-sized pieces. Set aside. Toss apple pieces in lemon juice, then set aside.
- In a large bowl, combine chicken breast pieces, apple, red onion, celery and red bell pepper.
- In a smaller bowl, whisk together yogurt, lemon juice, honey, garlic powder, onion powder, dill, Dijon mustard, black pepper and salt. Pour dressing over chicken and vegetables, then stir until well combined.
Per Serving (1 cup chicken salad, plus 1 cup lettuce leaves or mixed greens): 168 calories (36 from fat), 4 g total fat (1 g saturated fat), 49 mg cholesterol, 542 mg sodium, 12 g carbohydrates, 2 g fiber, 6 g sugar, 21 g protein.
