Simple Sashimi

This dish is simple on purpose! In Japanese cuisine, Sashimi is a dish that centers on raw fish (or cured meat). Other edible items are added in minuscule amounts to simply elevate the taste and presentation of the main ingredient.

Ingredients
- 1 large cucumber, sliced into 1/4" coins
- ½ c. of smoked salmon
- 2 t. dried chives or dill, for garnish
- 1 teaspoon of wasabi paste (optional)
Directions
- Evenly divide the cucumber slices between plates.
- Slice the smoked salmon into 12 small strips. Roll up each one when finished and set aside.
- On top of each cucumber slice, place one of the mini salmon rolls.
- Sprinkle both plates with dill as a garnish and serve with the wasabi (if using).
Per serving: 54 calories (14 from fat), 2 g total fat, 7 mg cholesterol, 605 mg sodium, 4 g carbohydrates, 1 g fiber, 2 g sugar, 7 g protein.
