"Fast & Fresh" Tostadas

In Spanish, tostada means "toast," which is fitting—because the key to this dish is getting those tortillas perfectly crisp! With bold toppings and just the right crunch, they’re a simple yet satisfying way to mix up your mealtime routine.

Ingredients

  • 4 6-inch corn tortillas
  • 1 ½ T. paprika
  • 1 ½ T. garlic powder
  • 1 t. salt
  • 1 can (15 oz.) pinto beans (drained and rinsed) or refried beans (heated)
  • 2 T. of homemade fire sauce or shredded cheddar cheese
  • ½ c. fresh diced tomatoes or low-sodium salsa
  • 1 large red, yellow or green bell pepper (chopped)
  • 1 medium lime
  • 1 medium avocado (optional)
  • ¼ c. fresh cilantro (optional)

Directions

  1. Preheat oven to 350°F. Place two tortillas side-by-side in two skillets (a baking stone can also be used for all four at once). Bake for 15 minutes or until crisp, flipping over once about halfway through.
  2. While waiting, add the paprika, garlic and salt to the pinto beans before heating on the stove or in a microwave.
  3. To assemble, spread tortillas with the homemade fire sauce or shredded cheese and the heated beans (using 1/2 cup for each tortilla).
  4. Top with tomato or salsa and chopped bell pepper. Add a spritz of fresh lime juice as a final flourish—along with the cilantro and avocado slices on the side (if using either or both) when plating. Serve, and SAVOR, immediately!

To Make the Fire Sauce:

  • 1 c. low-fat , no-fat or nondairy sour cream (or plain, low-fat Greek yogurt)
  • 2-3 T. hot sauce
  • 2 T. lime juice
  1. Stir all ingredients together in a small bowl until smooth. Chill for at least 30 minutes prior to using.
