Hasselback Sweet Potato Loaded with Greens

Hassel-what? Hasselback potatoes were “invented” in Sweden in the 1700s and were rediscovered by the foodie world a few years ago. This side dish is traditionally made with russet potatoes, but we’ve used sweet potatoes, white beans and greens to make it healthy and entree-worthy. Instead of cooking individual potatoes, slices of sweet potato are layered into a casserole dish.

Prep and cook time: 45 min. Servings: 12 (½ c. per person)

Ingredients

  • ¼ c. water
  • 2½ lb. sweet potatoes, peeled and cut crosswise into ¼-in. slices
  • 1½ lb. kale, chopped
  • 1 c. reduced-sodium navy beans, drained and rinsed (about half of a 14-oz. can)
  • 1¼ t. salt
  • 1 med. lemon, zested and juiced

Directions

  1. Preheat oven to 425°F. Spray a 9 x 12-in. baking dish with cooking spray.
  2. Put the sweet potato slices in a microwave-safe container with ¼ c. water and cover with plastic wrap. Poke a few holes into the wrap. Microwave on high for 7 min., or until tender and easily pierced with a fork.
  3. When the sweet potatoes are finished, cook the kale in a covered, microwave-safe container until wilted, about 3 min. Drain off any liquid from the kale and mash it together with the beans. Stir in the salt, lemon zest and juice.
  4. Assemble the hasselbacks: Spread a piece of sweet potato with a little of the kale-bean mash, and top with another slice of sweet potato. Continue making sweet potato and kale-bean mash “sandwiches.” Place them on-end in the baking dish (see photo) as you go.
  5. Bake for 20 min. until browned and heated through. Serve hot or at room temperature.
